After trying some cinnamon roasted walnuts at the State Fair a few years back, I knew I wanted them more than just during fair time, so I set about looking for a way to make them at home.

I found a couple different recipes that I tried, and finally tweeked a combination of a couple and came up with this…

1 pound nuts – Walnuts and Cashews work well, but try your other favorites.
1 egg white
1 Tablespoon water
3/4 cup sugar
1 Tablespoon Ground Cinnamon

Mix the water with the egg white. Coat the nuts with the egg white/water mix – I’ve found putting them in a jar and just shaking the whole thing up to be the easiest way. Then mix the sugar and cinnamon and add to the nuts and give another few shakes to coat well.

Take a couple of cookie sheets and cover with parchment. If you don’t have any handy, cut up a brown grocery bag and put them on the cookie sheet, printed side down. Spread the nuts out in a single layer and put in an oven preheated to 275 degrees and bake for about 45 minutes. If you have an electric oven, use the lower two rack settings. If it’s gas, move them up a notch. Every 10-12 minutes you’ll want to take them out and stir them up, otherwise they stick to the paper and then swap the trays around so the one on the top goes on the bottom.

When done baking, get them off the paper and let cool before packing into a jar or plastic bags… if you don’t eat half of them first.
