Grilled Waffle Sandwich

These make for a great “on the go” breakfast, and a much better alternative to the fast-food sandwiches.
What you need (per sandwich)
2 toaster waffles
1 egg
2 slices cooked bacon
1 slice cheese
In a skillet prepare the egg, either scrambled or over-hard.
While the eggs are cooking, lightly toast the waffles - just enough to thaw them out. Then butter one side of each waffle.
When the egg is done, take it out of the pan and reduce the heat to low. Put in one waffle - butter side down, then put on the egg, bacon, then cheese followed by the other waffle, butter side up.
By the time you get this stacked up, it will be about time to flip it to the other side. You want the waffle to brown and crisp up a bit, not get burnt. After you’ve flipped it, give it just enough time for the cheese to start melting and take it out and put it on a plate.
Instead of bacon you can use any breakfast meat you like, Canadian bacon, sausage patties, ham, etc. And use what ever cheese you like best or have on hand. Shredded cheese works just as good as slices.
If you’re not going to eat it right away, wrap it in a paper towel to take with you.
