Mexican Lasagna
This is one of those recipes that you can play around with to suit your tastes. Anything you would put on a taco you can add to your layers, and while I haven’t tried it.. I am sure you could use shredded chicken or port instead of the ground beef.
Ingredients
- 1 pound ground beef
- 12 ounces salsa or picante
- 6 tostada shells or halved taco shells or tortillas
- 1 cup refried beans (1 can)
- 1 cup sour cream
- 4 ounces shredded cheddar cheese
- shredded lettuce for garnish
- 1 package taco seasoning mix
Directions
in a skillet, brown beef and prepare per directions on taco seasoning mix.
Stir in 1/2 cup salsa.
Spread 1/4 cup salsa in a 10-in pie plate, top with 3 tostada shells.
Tops with half of each of the beans, meat mixture, sour cream and cheese. repeat layers.
Cover with foil.
Bake at 350 for 30 minutes. Top with lettuce, remaining salsa and additional sour cream.
Makes 6-8 servings.
