Apple-Banana Bread
I’ve tried a number of banana breads over the years, and after a bit of tweeking, this has become my favorite. For some variety, instead of baking the nuts in the bread, after it’s been baking about 10 minutes sprinkle the nuts on top. You can’t do it right away or they just sink in to the batter. On the apple side, I like to use a more tart apple, but use what you like.
Ingredients
- 1/2 cup butter or margarine, softened
- 1/2 cup brown sugar, packed
- 1/2 cup granulated sugar
- 2 eggs
- 3 tablespoons sour cream
- 1 banana, mashed
- 1 teaspoon vanilla
- 2 cups flour, all-purpose
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 2 apples, cored and chopped
- 1/2 cup walnuts, optional
Directions
Preheat oven to 350 degrees.
Cream butter and sugars, and beat in eggs.
Stir in sour cream, banana and vanilla.
In separate bowl, combine flour, baking powder, soda and cinnamon.
Gradually add to butter mixture.
Gently stir in apples and nuts.
Spoon into greased loaf pan and bake 1 hour.
